I’ve always been a fan of the more crepe like pancakes, the thicker ones were too dry for my taste. All the heavenly pancake towers build out of thick pancakes made me eager to find a recipe for thick but fluffy pancakes. After some try outs, and fails, I’ve created a recipe that fulfills my wishes. I actually even like these pancakes without a topping, that doesn’t keep me from drowning them in nutella though..
Ingredients; serves 2
2 tablespoons buckwheat flour
2 tablespoons almond flour
2 eggs
4 tablespoons almond milk
3 teaspoons cinnamon
2 teaspoons baking powder
3 drips stevia or 1 teaspoon honey
half a banana
some vanilla extract
I assume that most of you have made pancakes before so you know the drill and don’t need a detailed explanation for making them. Just mix all the ingredients and bake the pancakes in some butter or coconut oil. Enjoy!
